Organic mustard seed pickles for freshness and bitterness.     This recipe, queen of Norman “herringades”, quickly found its place among the favorites in our collection of iodized rillettes. 

To be enjoyed on fresh toasted bread or on a warm potato as an aperitif.     Focus on the partner Norman producer for this recipe: Mathieu Lagarde: sausage maker for 5 generations in Fécamp in Normandy.   In the 1930s, SEPOA DELGOVE focused on cod processing. 

Over time, the Lagardes expanded their activities by salting and smoking herring and mackerel in their workshops in Fécamp. HASAt the dawn of the 1950s, driven by ambition, they equipped their own vessel for fishing along the Normandy coast. The company was labeled a “living heritage company” in 2020, thus proving its attachment to the territory and local culture.
