Terroir Details The Coruscant Chardonnay terroir extends over 40 hectares. Located on the foothills of the La Clape massif, between the Aude and the Mediterranean, this terroir benefits from geology favorable to viticulture. A former island in Roman times, Clape, meaning “pile of stones” in Occitan, is characterized by thick scrubland, limestone cliffs and winding valleys. The wind, blowing 200 days a year, and the sun omnipresent for 300 days, make this site an ideal place for growing Chardonnay. This clay-limestone terroir allows the vines to flourish fully, producing exceptional grapes. Vinification and Aging Harvest: The grapes are harvested at the first light of dawn to preserve their freshness. Pressing: Carried out at low pressure to gently extract the aromas. Vinification: Fermentation takes place at low temperature to preserve the delicate aromas of Chardonnay. Elifting: On fine lees, which enriches the wine with its round and complex texture.
