
Zanthoxylum rhetsa is naturally grown at altitude, mainly in the highlands of Southeast Asia (North Vietnam), it can nevertheless be grown at lower altitudes such as on the Aromasia plantation. (map link) Unlike peppers from the Piperaceae family (Phu Kok pepper, Penja pepper and Madagascar pepper), the "Pepper from the peaks", also called Baie Ma Khen, is a false pepper from the citrus family of which only the pericarp is consumed. Features : To be used whole, it has very marked body notes of bark, citrus and finally some notes of eucalyptus. Tasting: Its taste characteristics allow it to be easily associated with shellfish or fish en papillote (beurre blanc sauce), it will also sublimate your meats (veal and pork) and duck (magrets and foie gras).
