The Beneventano IGT sparkling rosé is produced with Aglianico grapes, grown in the Mustilli-owned vineyards, in the municipality of Sant'Agata dei Goti, on calcareous, volcanic and clayey soils. After the hand-harvesting of the grapes, fermentation takes place in steel vats at a controlled temperature for about two weeks. This is followed by a spontaneous refermentation in the bottle without disgorgement, so much so that there is a slight deposit of the yeasts on the bottom of the bottle which - if shaken before tasting - releases aromas and flavour. Regina Sofia comes in a bright pomegranate pink colour, a shade underlined by the moderate effervescence. The olfactory notes are reminiscent of red fruit, such as strawberry and cherry, then a light floral and a subtle vegetal note. The taste is dry, fresh, saline and persistent. A wine with multiple combinations, thanks also to the low alcohol content.
