PHILENO PASSITO WINE

This wine takes its name from an ancestor of the Mustilli family, Fileno Rainone who lived in 1700 and is considered one of the first archaeologists of Campania. The wine is produced in limited quantities for the most loyal connoisseurs. The grapes are left on racks in a ventilated environment for three months, then pressed and fermented. The wine remains aged for nine years in French oak barriques. TYPE: passito GRAPE VARIETY: Falanghina 50%, Malvasia 25%, Fiano 25% COLOR: intense golden, good clarity. BOUQUET: intense and persistent with elegant fruity notes, hints of dried figs, apricot jam, acacia honey, biscuit, caramel, nutmeg, light herbaceous, musky and smoked notes in the finish. TASTE: full-bodied, sweet and quite warm, soft; pleasant acidic note and discreet mineral sensation. Overall it has a good balance between sweetness/softness and freshness. Long and clean finish thanks to a notable taste-olfactory persistence, harmonious. SERVING TEMPERATURE: 14-16° C. GASTRONOMIC PAIRING: Neapolitan pastiera, jam tarts made from yellow and orange pulp fruit and annurche apples, spicy mature cheeses
