When investigating the ways of introducing probiotics in food, we came to studies that show cocoa as an encapsulator and protector of probiotics in the journey they make through our digestive system until they become integrated into our intestinal microbiota, even improving other vehicles. traditional products such as dairy products and their derivatives.
