The Rub comes from the English "to rub" which means to rub. Also called “rubbing spices” or “rubbing salt”, it is most often used in a dry marinade. The principle is to apply the Rub directly to the food without mixing it with oil or any other liquid. It is essential for an American grill. Its primary function is to flavor meats without distorting them. Its use can extend to fish or vegetables / starches. Kansas City barbecue is considered the most dominant and recognizable style of barbecue in America. Their difference lies in the diversity of the meats used. Long smoked and often lacquered with a sweet sauce made from tomato, molasses and brown sugar, they have a golden crust and are usually served with baked beans, fries and coleslaw. Our Kansas City Rub is made on this typical sweet / savory basis.
