A family-run, local business based in Hauts-de-France, we promote this iconic plant in partnership with nearly 200 regional farmer-planters. Our French chicory is grown, harvested and processed locally, using environmentally friendly methods and short supply chains.

Leroux chicory has many uses: chicory drinks, food, cosmetics, animal welfare and cooking. A natural source of fiber, particularly inulin, chicory is known for its many benefits: digestion, vitality and general well-being, without the stimulating effects of coffee.

🌱From root to finished product: the stages of chicory processing

Step 1: Selecting, growing, and harvesting chicory

It all begins with the careful selection of seeds. Thanks to our expert breeder, we develop chicory varieties specifically adapted to our requirements in terms of quality, inulin content and climate resistance.

Grown in Hauts-de-France, on loamy soils ideal for chicory, the plant is sown in spring. It benefits from a temperate climate and balanced sunshine, promoting good root development.

Six months later, the chicory is harvested when ripe. Its root, full of inulin, is ready to begin its transformation journey. This step marks the beginning of a local, sustainable and 100% French production circuit.

🔥 EStep 2: Drying and Micronization

Once harvested, the fresh chicory roots are transported to our site in Vieille-Église, in the Pas-de-Calais region. They are washed, cut into thin strips called cossettes, then dried slowly at low temperature. This drying, which lasts several hours, reduces humidity from 76% to around 10%, while preserving the chicory's natural nutrients, particularly inulin.

The chips are then cooled and stored before being processed. In the case of unroasted white chicory, the chips are micronized, that is to say ground very finely. The result is chicory flour used in various fields: dietary supplements, animal feed, technical products, etc.

🌡️ Step 3: Roasting and Crushing

Roasting chicory is a key step in revealing its natural aromas and characteristic color. In our workshops, the cossettes are exposed to precise temperatures, controlled by our master roasters. This artisanal know-how allows us to develop a roasted chicory with a subtle taste, both sweet and full-bodied, without bitterness.

Once roasted, the chips are cooled for about 30 minutes. They are then crushed or ground, depending on the desired final product: chicory grains for infusion, powder for quick infusion or industrial preparation. The grain size is adjusted on demand to offer a wide range of textures.

💧 EStep 4: Liquid Extraction

Some products require a liquid form of chicory. For this, the roasted beans are directed to our extractors. Extraction is carried out by hot infusion, at 90°C, allowing the active ingredients and aromas contained in the roasted root to be released.

The liquid obtained is filtered, centrifuged, then concentrated by evaporation. The chicory juice thus extracted becomes the liquid chicory extract. Depending on the concentration level, you obtain:

a fluid liquid extract (approx. 50% dry matter)

a concentrated liquid extract (up to 55%)

a chicory paste (70% dry matter)

These forms are used in the food industry, catering, and the formulation of natural products.

🌬️ EStep 5: Spray drying to obtain instant chicory

Instant chicory is one of the most convenient formats for consumers. Obtained from the liquid extract, it is transformed into fine powder by atomization. This process involves spraying the concentrated liquid from the top of a 37-meter tower into a stream of hot air.

The micro-droplets dehydrate instantly, giving rise to a fine, fluid chicory powder that is easily soluble in hot water. The instant chicory produced is ideal for hot drinks, as a natural, caffeine-free alternative to coffee.

📦 EStep 6: Packaging and Distribution

The packaging of chicory products adapts to the diverse needs of our customers – whether industrial or private. Thanks to several production and packaging sites, we offer a variety of formats:

1. Dehydrated chicory powder: bagged at the Orchies site
2.Grain: packed in big bags/sacks at the Orchies site and in Pas-de-Calais for packaging in sachets
3.Soluble: available in jars or sticks at the Orchies site
4.Liquid: packed in cubis at the Orchies site or bottled in Loiret
5.Box: managed by an ESAT (Employment and Social Assistance) directly attached to the company for over 10 years.

Each step is rigorously monitored to ensure high-quality chicory, produced with French expertise and meeting market expectations.
