David took over the family farm in 2008 in Cappelle-Brouck, a small 40ha structure, with various crops of wheat, rapeseed, sugar beets and potatoes. Everything remained to be built and developed...

The first years of the farm allowed David to take over land to develop the surface area to exploit and to diversify crops such as flax, a crop specific to the North of France.

In 2017, the distributor Stop of self-service flavors of potatoes and other local farm products (apples, eggs, strawberries, endives, etc. depending on the season) was created with the aim of promoting its apple production of direct land, to avoid uncertain income according to global financial markets (from €30 per tonne to €250).

Mathilde, married since 2012 to David, spent her sales/marketing career in large food companies until 2021, the year of birth of the youngest Charlotte.

The area of aperitif having been dominant in Mathilde's experiences, it seemed obvious to both of us that: aperitif + potatoes = good chips with a potato flavor!

With the desire to continue to diversify the farm and to master a farm product from processing to short circuit sales, they embarked on the market study and financial study of the project accompanied by students .

RESTORE FOOD SOVEREIGNTY IN FRANCE WITH POTATOES PRODUCED IN FRANCE AND PROCESSED INTO CHIPS ON THE FARM => THIS IS THE AMBITION OF THE CHIPS EN N’ORD CHIPS FERMIERES PROJECT

Throughout 2022, the farm was in turmoil between planting potatoes (and other crops of course... with the help of Henri alternating on the agricultural part), setting up the laboratory for host the processing line (with the help of Damien, David's brother) but also find the raw materials (fleur de sel from an independent producer from Noirmoutier, French oleic oil), create the packaging with the creation of the design in partnership with a freelancer in the sector, the creation of social network pages with the arrival of Céline (alternate in digital marketing and communication on social networks) and present the project to future clients (Mathilde's role of prospecting, selling and deliver). What an adventure !

It was in November 2022 that the first farm chips were produced and packaged to the delight of all our consumers. The first ones were really not very salty, we adjusted this variation to adapt to the palate of a majority of our consumers. That’s the flexibility of the farm workshop! We adapt !
