These berries are native to the West Coast of Africa, from a region stretching from Guinea to Congo, and called the Malaguette coast. These seeds have been used for a very long time and were very popular with us in the Middle Ages, before the massive arrival and popularization of pepper. Its scent is very floral, rose water, iris and violet evoking oriental sweets like rahat loukoum. Its flavor is acidic, sharp and spicy, it is less pungent and less burning than pepper, with notes reminiscent of cardamom. Directions for use: Use it for soups, vegetable dishes, rice and with meats such as lamb, chicken or pork. Grains of paradise can be used as an alternative to pepper. They are particularly appreciated in dishes where a spicy but mild taste is desired, without the intensity of black pepper. You can grind or crush them lightly before adding them: In soups, stews or sauces: Add a small amount to enhance creamy sauces, broths or meat stews. In marinades for meat or fish: Mix ground grains of paradise with other spices to marinate meats such as chicken, beef or lamb, or fish before cooking.
