To develop this recipe, we have selected pork meat from the Aubenas slaughterhouse just 10 km from our manufacturing workshop to which we add 30% pieces of dry ham matured in Ardèche. We chose to cook slowly to harmonize the taste of the ham in the meat of the rillettes. The fibers of dried ham are very present and enhance the taste of these very gourmet rillettes.
