Old-fashioned pork rillettes with lots of black olives and a few green olives... A recipe rich in the aromas of the South with a real taste of olives. All our rillettes are made from pork slaughtered at the Aubenas slaughterhouse a few kilometers from our production workshop. The meat simmers for hours before Marc & Onésime shred each piece one by one by hand.
