
Novilunio del Ribeiro is made with 90% Treixadura grapes and 10% Albariño grapes, planted on fresh and permeable granitic soils. It is harvested by hand, bunch by bunch, in 15 kg boxes, and fermented with control yeasts and its own pie de vat, aged and refined on lees in a steel tank for 5 months. It stands out for its yellow color, its clean and bright appearance with golden reflections and its medium intensity layer. Its aroma is intense, complex and very varietal, with notes of ripe fresh fruit such as apple or pear. It is a structured and broad wine that fills the mouth, balanced and with a certain smoothness and freshness. It has a good harmony between alcohol and acidity that gives it roundness and a certain warmth, and culminates with a long and persistent finish. It pairs very well with mollusks and shellfish, and is a good companion for light tapas and salads. Alcoholic strength: 12.5% vol. Service temperature: 9 to 11 ºC.
