Remember that our profession of chocolate roaster revolves around several lines of thought. We first select exceptional cocoa beans from different terroirs. We then roast these beans in our workshop, a complex and delicate process, combining technicality, intuition and creativity. Our idea is to accurately and precisely express the aromas of this brown gold. A rigorous research phase is therefore necessary to best conduct these transformation processes.
