Country Terrine, recipe from my Grandfather

A "vintage" terrine inspired by the first recipes developed by Gabriel Dubarry, the creator of the Dukes of Gascony. Especially no additives, no coloring, no preservatives, only selected pieces of pork, rind, a carrot brunoise and a little bay leaf are passed through a chopper for a coarse cut on the 13mm grid. to consume very cold accompanied by mustard from Gascony or a few pickles, it will be the ideal companion for snacks shared with good friends To taste fresh. Can be kept for 1 to 2 days in the refrigerator after opening. Ideal for your starters or aperitifs.
