Located in La Biolle near Aix-les-Bains and Lac du Bourget, at the crossroads of the Savoie vineyards and at the foot of the mountains, we transform Savoie wines into red wine and vinegar vinegars in the traditional way in oak barrels. White wine.   This slow acetic fermentation method produces fine and flavorful vinegars.
White wine vinegar is a very interesting condiment which is one of the bases of Italian cuisine but surprisingly very little used in France.   Also, we have offered a range of white wine vinegars with plants (genepi, lemon thyme, hyssop) and an ephemeral seasonal reference (wild garlic, fir buds, arquebus...).
Cider vinegar is also a specialty of the vinegar factory where cider is made from cross apples, small acidic apples, typical of the orchards of Savoie and Haute-Savoie.  

Our vinegars are simply filtered but not pasteurized.
With 40 acetification barrels, the workshop can produce up to 15,000L of vinegar annually.
