Espelette pepper is a Controlled and Protected Designation of Origin. Only ten municipalities in the Basque Country can carry this label: it is a guarantee of authenticity. This aromatic pepper has a moderate heat (4/10 on the Scoville scale), which enhances both sweet and savory dishes. Meat, fish, shellfish, vegetables or cheese, its use extends to all dishes.
