Iranian saffron is recognized to be the best and the Neguine quality - which means "pearl of saffron" in Persian - is the rarest and most famous. Widely used for its virtues, it is known to bring a bewitching flavor and a beautiful coloring in cooking. But be careful, it must be used correctly for the magic to work, and the key is the infusion. Depending on the recipe, measure out about 1 to 2 pistils / pers. (i.e. 3 to 6 filaments), put them in a cup and add one to two tbsp. tablespoons of lukewarm liquid (eg water), cover and let infuse ideally the day before for the next day to obtain the best result - which you can if you are short of time - then incorporate everything into your preparation.
