Le Blanc de la Nièce 2022 - Natural Wine - Organic

This natural mandarin white wine is a unique micro-cuvée, entirely vinified in our cellar in Courbevoie, from a blend of a light white wine and an aromatic macerated white wine, grapes from vines that our partners work organically and biodynamically. It is a light and fruity white, the aromas evoke holidays, lychee and melon, with a finish on apple cake. We sipped it with a mozzarella made in Paris, on psychedelic soul from the 60s. This mandarin wine is a blend of Chenin vinified in white and Gewurztraminer vinified in orange. We will get the Chenin from the winegrowers Grégory and Elisabeth Nouteau, who work their vines organically in Anjou and the Gewurztraminer at Domaine de l'Envol, who work their vines biodynamically in the Haut-Rhin in Ingersheim. They are harvested by hand then we bring them back to Courbevoie where we continue with the vinification. The grapes arrive at 8°C in the cellar. For the Chenin, the grapes are immediately pressed and pumped into a stainless steel tank. 48 hours of settling, we make a racking then the fermentation starts and is held around 18°C. This is followed by malolactic fermentation and aging for 5 months in vats. For the Gewurztraminer, the grapes are immediately destemmed and crushed then pumped into a stainless steel tank. A cold maceration of 48 hours then the fermentation starts, we pump over daily for 10 days then maceration for 152 days and we press the grapes. The wines were then blended to create this explosive white. We only use a very small dose of sulfur which remains within the levels of natural wines (29 mg/L in total SO2) Happiness in a bottle 🙂
