Le Rosé de Mamie "under veil" 2021 - Natural wine / Organic wine

This wine “under veil” is a blend of Grolleau Gris vinified in white and Gamay Noir vinified in red. It is a refreshing and dry rosé wine, the aromas evoke a double dessert with salad with three citrus fruits and creamy flan. We get the Grolleau from the winegrowers Grégory and Elisabeth Nouteau, who work their vines organically in Anjou, and the Gamay from Xavier and Géraldine Cailleau in Anjou, who work their vines biodynamically. They are harvested by hand then we bring them back to Courbevoie where we continue with the vinification. For the Grolleau, the grapes are immediately pressed and pumped into a stainless steel tank. 48 hours of settling, we make a racking then the fermentation starts and is held around 18°C. This is followed by malolactic fermentation and aging for 5 months in vats. For Gamay, we follow the principles of carbonic maceration. The grapes are placed in whole bunches in a stainless steel vat, which is saturated with carbon dioxide, closed and the intra-pellicular fermentation follows. 10 days of maceration and the grapes are pressed which only allows to extract very little color and a lot of fruit. The wines were then blended and followed by aging “under veil” to give them aromas of nuts. A very surprising wine. We sipped it with a flowing Ile-de-France sheep cheese, on a background of metal from the 80s.
