Dry sausage in oil comes from a very old process which consisted of preserving the dry sausage for several months after opening. The oil stops the drying and therefore the refining of the oil. The dry sausage is made in our workshop in Moulin Mage in the heights of the Tarn in an artisanal way with zero preservatives. The sausage is made with meat from Millas pork which is raised a few kilometers from the delicatessen, on straw, without GMOs, without antibiotics but with a lot of love from the breeders. When you want to taste it, remember to drain the sausage in paper towels.
