Plain fine dry sausage - without added nitrite salt

Our dry sausage is made from pork meat from pigs raised on straw in Aveyron and Tarn by three breeders with whom we work exclusively. Our natural dry sausage is seasoned with southern salt and ground Sarawak pepper.
