Our dry sausage with Espelette pepper AOP is made with meat from pigs raised on straw. These pigs are fed with guaranteed GMO-free cereals and raised by our three breeders with whom we have created a strict quality short chain: Apalhat (raised on straw in Occitan). We dry our Espelette PDO chilli sausage in a natural dryer at an altitude of more than 850 meters. The quality of the chilli, our pigs mixed with our know-how make our product unique in taste.
