Eggplant Caviar with Basil

For this recipe we use white eggplants which we mix with lemon and basil.   Our raw materials are carefully selected locally in order to produce a high quality product with a real scent.   You can use our eggplant caviar as an aperitif on toast or during certain culinary preparations. Recipe idea: Tomato tart & eggplant caviar with basil: Ingredients : For the dough: - 250g of flour - 1 egg - 125g butter - 4 tablespoons of water - A pinch of salt For garnish : - 3 tomatoes - Herbs of Provence - A spoon of olive oil - A verrine of eggplant caviar with basil Preparation: Pour the flour into a salad bowl then make a well to place the egg.   Add the butter cut into small pieces, the spoons of water and the pinch of salt then mix.    Knead the dough then roll it out before placing it in a buttered pie dish.    Cover the bottom of the tart with eggplant caviar and basil then cut slices of tomatoes and place them on top.   Pour in the olive oil then sprinkle with Provence herbs.   Place in the oven for approximately 25 minutes at 180°.    Enjoy!
