DESCRIPTION: This tannic and full-bodied red wine is produced by the family estate Tenuta Bastonaca, and comes from plots located at an altitude of 700m on the slope of ETNA, the largest active volcano in Europe. Vinification and aging: The grapes are selected manually, destemmed, then alcoholic fermentation and a maceration stage with the skins are carried out for 18 days. Finally, the wine is aged for 12-18 months in large 25 hL wooden barrels and at least 6 months in bottle. This method of aging allows the tannins to be softened without overly marking the wine with the aromas imparted by the wood, in order to obtain a pure expression of this volcanic terroir. Tasting notes: – Appearance: Intense ruby red color with purple highlights. –Nose: Aromas of red fruits, with mineral and vanilla notes. –Palate: With a beautiful tannic structure and vibrant acidity, this wine is both full-bodied and airy. It benefits from a magnificent balance, enhanced by flavors of red fruits. Aging potential: 7 to 10 years Recommended serving temperature: 16-18°C Recommended consumption: Open and air at least 1 hour before tasting. Food and wine pairings: Beef tournedos, Nebrodes black wild pork, game with mushrooms, mature cheese.
