HASUsing a base of organic Riesling wine from the best vintages of Alsace, we produced this vinegar in Ile-de-France. All production was done in French oak, Burgundy barrels. A slow natural acetic fermentation (acetification), started with a native mother. 36 months of maturation in Burgundian oak barrels. Without preservatives. Unfiltered. Manual bottling.
