Pugliarella is a brand of the Ciavarella Michele agricultural company.
The company is located in Puglia, precisely in San Severo (FG), where I am
located the owned land used for the cultivation of ancient grains (Senatore Cappelli, Marco Aurelio, Pietrafitta).  
All production phases are carried out on our own, from plowing the fields to harvesting.  
The Pugliarella brand produces and markets artisanal pasta obtained from ancient grains grown within the company itself, such as Senatore Cappelli, Pietrafitta and Marco Aurelio. All formats require an artisanal production method, consisting of prolonged dough, slow kneading, pressing, bronze drawing and slow drying at low temperatures. 
Bronze drawing allows to obtain a rough and porous surface of the
pasta, ensuring great permeability to seasonings. The drying takes place slowly at low temperatures, preserving the high nutritional value of the ingredients, excellent stability during cooking and an excellent taste of the pasta. 
 
The Ciavarella Michele agricultural company has been operating in the agricultural sector for approximately three years
generations passing on the vision of their father Giuseppe aimed at valorisation
of the Apulian lands and all their potential. 
Since its inception, the foundations of the Small Artisan Producer have been preserved, keeping the company's characterizing tradition alive, while keeping an eye on the future and a persistent focus on the environmental issues promoted by the UN Agenda 2030. 
The company that has developed over the years is characterized by an agricultural concept
innovative, in which efficiency and effectiveness are sought in terms of waste and timing, reducing environmental pollution and guaranteeing the highest quality of the products offered to its customers' tables.
