Pasta Piemonte invites you to discover Easter Colomba! It is the essential dessert during the Easter celebrations in Italy and represents peace. Like the panettone, the pastry of the Easter dove is made of flour, eggs, sugar, yeast and butter and candied fruits. The cake is sprinkled with grains of sugar and whole almonds. Where does this tradition come from? As often, several legends surround the creation of this dessert. One is linked to the Abbot Saint Colomban who, thanks to his blessing, transformed a meal that was too rich during Lent, into bread that took the form of white doves. Another takes us to King Alboin, King of Lombardy in the middle of the 6th century, to whom a dessert in the shape of a dove was offered as a sign of peace during the siege of Pavia.
