Isot chilli flakes get their black color when the hot red peppers are chopped and cut into flakes and dried in the sun for three days - some say because they get their unique flavor from the heat of the sun, others because they do warm the inside when eaten. It can be used anywhere that chillies are used. It is an essential ingredient for skewers, roasted root vegetables, cheese, meze (baba ghanoush and hummus) or tomato salads. ❖ ISOT pepper is grown in Sanliurfa in southeastern Turkey and is also known as Urfa pepper. When consumed fresh, it is a lively, ruby red pepper with an incredibly sweet taste and a very hot spiciness. ❖ The dark color of ISOT is due to the two-part drying process: After the harvest, the ISOT are partially dried under the summer sun before they are tightly packed in bags and "sweated" overnight. The dried flakes retain some of the natural oils in the pepper and never dry out completely. The process is repeated for about a week as the color of the dried peppers darkens to a deep burgundy or purple black. ❖ The earthy taste of ISOT is compared to coffee, tobacco, dried fruits and chocolate. ISOT traditionally uses meat dishes (such as kebab), vegetable stews, try it on fried root vegetables, cheese, meze (baba ghanoush and hummus) or tomato salads. It also contains sweet and fruity notes and is paired with chocolate, vanilla or ginger in desserts such as brownies, gingerbread and dried fruit. ❖ ISOT goes well with cumin, sesame, red pepper or onion when combined with other spices. The dry undertones and the exquisite, nuanced spiciness of ISOT make it ideal for desserts and sweet dishes such as cakes, ice cream, gingerbread and even sweet chutney.
