Mikan Mandarin Bark

The Mikan or also called mandarin Satsuma is an emblematic fruit of Japan. Like the clementine we know, it is on all the tables when the picking season comes, which begins in fall and ends at the end of winter. Its flavor is mild, sweet and slightly bitter. It is used in the preparation of sauces or in pastry (ice creams, mousses, jellies ...). Be careful not to heat it “dry” as this may increase its bitterness.
