Nutmeg mace

Mace is grown around the core of the nutmeg fruit. It is much rarer than nutmeg and its flavor is more subtle. It can be used in all dishes, sweet or savory, where you want to add the flavor of nutmeg with more delicacy. It is also used as a binder, it unifies the flavors in a dish. However, be sure to powder it well or use an infuser because, just like with cardamom, crunching into a piece of mace (even a small one) is very unpleasant in the mouth.
