The history of our company is linked to the history of our family, the founder EUGENIO BREZZI, my father, discovered truffles at the end of the twenties of the last century, when my grandfather Pietro took him to collect pine trees in the pine forests of the Tuscan Maremma. 

During those long days of work, my father was attracted to a man who, walking around the pine forest with his dog, seemed to be looking for a hidden treasure. 

With the curiosity of a child and the enterprising spirit he followed the "odd couple" until he saw the dog stop, start scratching on the ground and bark joyfully. 

The man bent down and picked up something, petted the dog and they both left visibly satisfied with the result of their search. 

My father approached carefully and examined what remained of the precious find, taking some small fragments of what must have been a fragrant and precious truffle. 

Jokingly wanting to emulate the game he had witnessed, and with a glimmer of intuition, he took those little pieces home and let his dog Lola smell them. 

Then she started hiding the pieces and every time Lola found them she was rewarded. 

This is how the story of this "little great truffle hunter" began.
 
Over the years, as a simple truffle hunter, my father also began to buy and sell truffles from other truffle hunters. 

Immediately after the Second World War the activity resumed frantically and grew rapidly over time. 

One of the main problems became that of being able to market the considerable quantity of truffles collected, in those days there were so many of them. 

If on the one hand it was relatively easier to sell the most beautiful and large truffles to restaurants, it was much more difficult to sell the small ones, even if in terms of quality they were the same. 

My father then thought of using the smaller truffles to make a cream, a puree that could be sold in the months when truffles were not available. 

By adding only oil and a pinch of salt as a preservative he created the FIRST truffle puree in the world, it was 1946!
 
This new product received a lot of approval in restaurants and subsequently also in delicatessens and food shops. 

Subsequently he also began to preserve whole truffles in boxes and glass jars. 

Today our company, faithful and respectful of my father's original idea, has made the choice to remain a small company linked to family tradition using simple processing methods, completely natural without the use of preservatives and chemical flavourings.
