The history of our family begins in 1850, when Pietro Malpighi, great-great-grandfather of Massimo, now president of Acetaia Malpighi, passed on a precious legacy to his son Augusto: the recipe for producing true and genuine “Natural Vinegar”. 
That precious recipe has passed from hand to hand for five generations, five generations united by passion, by respect for a strong tradition that has been carried on for a long time up to the present day.
Pietro, then Augusto, Nonna Maria, Ermes (among the founders of the Consortium and Master Taster AED) and today Massimo who presides over the family business.
Time has passed, spaces have multiplied and today we hold more than 3.000 barrels where the real Traditional Balsamic Vinegar of Modena DOP rests and slowly matures, a treasure that only those who know it closely can carry in their hearts.
Alongside the production of Traditional Balsamic Vinegar of Modena DOP, we also produce Balsamic Vinegar of Modena IGP, and create Light, Dark and Flavoured Dressings, Pearls, Jellies, Seasonings and Appetizers based on Balsamic Vinegar of Modena IGP.
