History The ASSEMBLAGE whisky is the fruit of the collaboration between Aymeric, oenologist, father of French whiskies A. Roborel de Climens, Cedrik and Axel Nadé, founders of Maison Mounicq, specializing in the production of spirits made from grapes. ​The people of Bordeaux have combined their expertise to create a selection of whiskies imbued with their shared passion: vines. ​Aymeric selected the best eaux-de-vie from the Hepp Artisanal Distillery, then refined them in wine barrels from Bordeaux Châteaux. The Nadé brothers, after having selected three of them, were inspired, once again, by their winegrowing roots in order to marry them perfectly as one would blend a wine. Design Collection No. 1.04 is 808 bottles, a new production, new barrels, new grape varieties, the same Bordeaux châteaux with the same aromatic profile. We have researched with the subtleties of the new selected barrels to create an exceptional blend: Merlot from Château Guadet, in Saint-Emilion (12 months) Semillon from Château Doisy-Daëne, in Sauterne (18 months) Sauvignon from Clos Floridène, in Graves (16 months) Aromatic profile Despite its alcohol content of 50.2%, this whisky is, paradoxically, very delicate and round like the other creations of Maison Mounicq. The three years of aging in French wood give ASSEMBLAGE aromas of flambéed bananas and ripe fruits in the mid-palate, finishing with delicate, persistent bitter citrus fruits. On the nose, it reveals delicate aromas of candied fruits, vanilla and cocoa. Refining in old Bordeaux wine barrels allows ASSEMBLAGE to reveal the subtle flavors of the different grape varieties: Merlot, St Émillion, gives it notes of red berries, prunes, undergrowth and spices, while Sémillon, Sauternes, gives it nuances of candied fruits, acacia flowers and honey. As for Sauvignon, Graves brings freshness and slight touches of bitterness. Their union produces a pretty dress and great complexity. Tasting advice To be enjoyed pure, to fully appreciate its aromas. You can also add a few drops of pure water to soften and open up its flavors further.
