DESCRIPTION: This dry and mineral white wine is produced by Fikardos, a family-run estate located in the Paphos wine region of Cyprus, whose aim is to create wines that reveal the true character of Cyprus. Vinification and aging: The grapes are cold macerated for 14 hours, then fermented at 15°C. Finally, the wine is aged on fine lees with stirring for 3 months in stainless steel vats, to give this wine a little structure and smoothness. Tasting notes: – Appearance: Lemon yellow color of medium intensity. –Nose: Aromas of pink grapefruit, peach, apricot and green apple, with delicate notes of lemon blossom. –Palate: The acidity combined with the minerality gives this wine freshness and liveliness. This is balanced by a slightly octane body, which gives it a certain finesse. Aging potential: < 3 years Recommended serving temperature: 6-8 °C Food/wine pairings: Grilled sea bream, octopus, calamari, grilled chicken souvlaki.
