ORGANIC WINE ​In the third generation, Jacopo is now running the Giovannini winery, which his grandfather Garibaldo founded. The craft has evolved, but their attitude is still the same, the belief in creating excellent organic wines in a natural way. An organic Giovanni wine combines an extraordinary taste with a special quality. The result: even better wines, but above all a non-standard taste. This Chardonnay is harvested in the Rubicone wine region. Historically, the Rubicon was a border river between the Roman province of Gallia Cisalpina and Italy proper. This region gained worldwide fame because of the crossing of the Rubicon river by Gaius Julius Caesar in 49 BC. Before crossing the river, Caesar said: "ale icta est", which means something like "The die has been cast" and thus heralds a new era for Rome. The Rubicone river rises in the mid-altitude Apennines, flows through the southern part of Emilia-Romgana and empties into the Adriatic Sea. Where the exact historical location of ancient Rubicone was has not been finally clarified. Nowadays, in the province of Bologna - Imola is part of the Rubicone area, which produces DOC/G and IGT wines. COLOR The Chardonnay "Ops" has an intense yellow-orange color. Promising density in the glass. SMELL a strong scent of bananas and pineapple. ​TASTE This organic Chardonnay is a powerful wine with intense tropical fruits on the palate. On the palate it develops a soft and mineral taste. RECOMMENDED TO This unique Chardonnay is a suitable accompaniment to spicy dishes such as breast of goose, roast chamois or chicken. Its spicy and herbal aroma also makes it a great accompaniment to Mediterranean dishes such as goat cheese quiche with pears and nuts or dates wrapped in bacon. PARTICULARITIES For more than 10 years only own yeasts have been used. Giovannini's organic wines contain less than half of the legally required sulfite values ​​and are very digestible. In addition, biological microorganisms are used, which improve the photosynthesis of the leaves. The handpicked grapes are harvested in the last week of August and left on the skins for 5 days.
