Welcome to the Valhalla Estate!
I am Fanny, a passionate producer of Saffron, prickly pears and aromatic plants on the preserved lands of Latour-de-France, in the heart of the Pyrénées-Orientales. My estate, cultivated organically and by hand, extends over 8 hectares of historic terraces where nature and biodiversity are fully expressed.
With an eco-responsible approach, I breathe new life into these plots abandoned by the elders, by restoring dry stone walls and forgotten paths. I favor endemic species adapted to the Mediterranean climate, such as saffron, Italian helichrysum, prickly pears and wild plants that I cultivate or harvest with care.
Artisanal and committed production
Each product tells a story, from my solarized plant macerations to my organic dried saffron offered in elegant, reusable containers. True to my values, I combine quality, aesthetics and respect for the environment in each of my creations.
Aware of the potential of the existing vineyard, I trained in the art of artisanal vinegar. In February 2024, I will launch a Syrah vinegar, plain or flavored with plants from the estate. And that's not all: saffron soaps, scented meads, plant salts in collaboration with a salt marsh worker friend... My range is constantly expanding around my passion for plants and their thousand virtues.

You can find my products at the village market, for direct sale, or delivered locally. My website and partner delicatessens also allow you to discover and order my creations. The Christmas period promises to be the ideal time to offer an authentic gift that carries values.
