Our marsh is made up of 3 salt pans with a total of 56 carnations.
In 2022 we restored a first pool of 22 salting areas.
Our farm is located in the heart of the salt marshes of the island of Noirmoutier in a nature shaped by man since the 5th century.


All herbs, spices and condiments are certified organic
Apart from the 5kg and 15kg bags of coarse salt which are made of plastic, all our bags are made of laid Kraft paper lined with corn starch to guarantee the tightness of our products.
We hand stamp all of our bags and labels with water-based ink. Thus our bags are fully recyclable.

Coarse "grey" salt develops on the bottom of the carnation, on a bed of natural clay.
During its crystallization, it will be loaded with mineral salts and trace elements such as calcium, iodine, magnesium, sodium, potassium, iron, manganese, zinc, fluorine and copper...

Fleur de sel forms a thin layer on the surface of the water, similar to frost.
It is a finer crystallization, more colorful, tending towards pink and which will have a scent at harvest very close to violet.
Much more "delicate" and rare, it is harvested after a day of east wind which is a dry and regular wind which dries the surface of the brine.

Glasswort is a halophyte plant that grows naturally in soils rich in sodium chloride (salt).
We harvest it from May to July, picking only the upper parts of the plant so as to let it grow throughout the summer season and thus be able to go to seed from August and regenerate.
We harvest, pick, dry and sort our salt and glasswort in the traditional way, only by hand.
