2021 JUNGFER Riesling dry VDP.BIG GROWTH

The winemakers have known about their best vineyards for generations. Based on this knowledge, committed winemakers in the Rheingau have campaigned for a classification of the vineyards. In addition to this knowledge, the rigorous pursuit of quality throughout the vegetation, right through to the selective hand-picking of the fully ripe grapes, are of decisive importance. The development of Hallgarten and its viticulture is undoubtedly linked to the neighborhood of the Cistercian monastery of Eberbach. Presumably, because of the high esteem of the Kreszensen growing in their Hallgarten vineyard, the monks inferred that the Virgin Mary was and called this vineyard "Jungfer". Leaning to the southeast to southwest, these vineyards enjoy the warmth of the midday sun. The high proportion of quartzite in the soil absorbs this heat during the day and releases it to the vines at night. This is also decisive for the high minerality of the "Jungfer" and its long shelf life. The grapes for this wine come from older plots with reduced yield levels and were harvested from mid-September to early October. They were golden yellow and ripe, some of them overripe and very aromatic. After the harvest, some of the grapes were left to steep on the mash or pressed immediately. The slow fermentation of the must and the maturation on the yeast took place in stainless steel and the classic wooden barrel. After bottling in April, the wine matured in the bottle until it was first sold in September. 13.0 vol% alcohol
