The Bières Ney brewery has been located since 2011 in the heart of the Monts de Gy in Franche-Comté, in the small, characterful Franche-Comté town of Bucey-lès-Gy. Located 35 minutes from Besançon and Vesoul, not far from the Gray plain, the brewery quenches the thirst and comforts travelers passing through the land of red bottoms and white bottoms.
Ney Beers are nourished by collaborations with farmers, winegrowers, roasters, hunter-gatherers to compose eclectic recipes from the cultural and agricultural terroir. The beers are aged in old oak barrels in vaulted cellars, like many of those found in the traditionally wine-growing village. The cellar consists of 30 oak barrels in 2022. The cultivation of a small orchard and a vineyard also supplies seasonal brews. The cereals used in manufacturing are mainly local thanks to a long-standing partnership with local organic farmers.
Since 2017, in addition to a varied range of traditional beers, the brewery has specialized in indigenous fermentations, without yeast, on grape marc (Trousseau, Ploussard, Savagnin, Chardonnay, Gewurztraminer, Muscat...)or on fruits. In 2022, a Coolship was installed under the roofs of the barn located above the aging cellar for the experimental brewing of spontaneously fermented beers.
The karst and forest massif of the Monts de Gy, attached to the tabular Jura, provides quality brewing water, which it abundantly charges with carbonates, not unrelated to the typicality of the beers.
