In Provençal memory, pulses have always been grown in Provence. Chickpeas first, of course, emblem of Provençal pulses found in many local recipes in Provence and neighboring Italy, but also all other species: lentils, beans, broad beans, peas, etc.
Most pulses are among the first domesticated plants in the Mediterranean basin. This is the case with peas, chickpeas and lentils, to which must be added broad beans, which are Mediterranean but whose precise origin is still unknown.
