Dried Organic Vegetables
Since 2020, I have been preserving vegetables from a network of organic gardens in Umbria with a solar dryer.
-The farmers deliver the vegetables to me at peak production times so I get the best quality and nothing is wasted.
-I process the vegetables manually within 12 hours of harvesting.
-The solar oven works at a low temperature in order to obtain a raw, nutritious and good product.
-The result is ingredients similar to spices but with new and lively notes.
My products can be used:
- as spices at the end of cooking or added to salads
- as an aperitif eaten raw, sweet and sour or fried
- as an ingredient hydrated or added during cooking
In the last period our bestseller has become the Aglione della Valdichiana, a light and digestible giant garlic.
A rediscovery of Italian biodiversity that is and will be talked about a lot.
