At Chai Julip it’s the vines that set the pace!
Our land: shale soil with a very low pH (minerality), renowned for producing high-quality juices.
The vines are intertwined with shrubby vegetation mainly composed of rockroses, holm oaks, mastic trees, strawberry trees, boxwood, cade, pistachio trees... The fauna is not left out: common crane (love to walk alongside us!), harrier, eagle, nightingale (present every day in size!) deer, fawn….and wild boar in large numbers (fan of our very ripe grapes 😏)...
Each wine has its own personality, our mission is to support it by providing the best conditions so that it can fully express its natural character.
This vision permeates each of our choices and actions. Our work is focused on the best possible management of the vines naturally and manual harvesting.
Our winemaking uses native yeasts and no inputs, with gentle extractions and minimal filtration, in order to obtain vintages that are both digestible and complex, faithful to these magnificent terroirs.
