In the heart of Astarac (Gers) and Bigorre (Hautes-Pyrénées), the Noire d'Astarac Bigorre sector distributes poultry of the Gascon breed, ancestral rancid which has been saved by enthusiasts. These exceptional poultry benefit from the best rearing conditions between the Pyrenean foothills and the Gers hillsides.
Black poultry from Astarac Bigorre takes its time to grow: more than 150 days. Finely marbled, its flesh is firm and holds well to the bone. Oily, but not excessively, it releases the juices during cooking which give it its softness in the mouth and its pronounced and delicate taste at the same time.
