I have been a self-employed pastry chef for almost 8 years now. I first sold my pastries for 3 years in a food truck where I participated in markets, fairs and events, in Meurthe et Moselle. Then, I felt ready to settle down permanently near my home, so I rented a 20 m2 space with a small laboratory to turn it into a vintage tea room. After some work and a lot of flea markets, I finally opened but unfortunately the COVID lockdowns started a month later! I had to force myself to close 2 years later.
A move the following year to the Vosges, and here I am again at the covered market in Remiremont to sell my dry pastries including amaretti (plain, coconut, coffee, hazelnut, matcha, raspberry, lemon, spices) of course, my specialty.
