Penrose is a cooperative structure that combines on the same site, in Beaucouzé, near Angers, an organic artisanal brewery (craft beers) and an organic mushroom farm (oyster mushrooms and Shiitake).
It is a circular economy project led by three long-time friends, Antoine, David and Guillaume, committed to healthy and local food.
In the medium term, they want to use spent grains, the waste from the brewing of beer (cereals), as a growing medium for mushrooms. In the meantime, Oyster mushrooms and Shiitakes grow on blocks of organic straw from Brittany.
