The Rossa Sera Social Cooperative helps the economic and social autonomy of fragile or disadvantaged people through agricultural work, due to its particular therapeutic relevance.  
We have made uncultivated land productive, improving the well-being of the community by enhancing the territory and the people who live there.  We follow the entire product chain, from our land to your table, respecting seasonality, the territory and the health of those who work and those who purchase them.
 Among our products we highlight the superior category extra virgin olive oil, with a pronounced taste and a green-gold color.  The predominant taste is due to the cerasuola, which is present at 80% compared to the other two varieties of olives used, the biancolilla and the nocellara.  All the olives come from cultivated land in the Trapani area.  The pressing takes place within 24 hours of the olive harvest, the oil is cold extracted with a continuous 3-phase cycle and storage takes place in stainless steel silos at a temperature below 18°C.  The result is an oil that keeps its organoleptic characteristics intact, better filtered and with a longer shelf life.
 We transform our aubergines grown in our lands in the Trapani and Palermo areas into caponata, a typical Sicilian side dish that combines flavors and ingredients from the culinary heritage of the Arabs.  They are top bell quality, which remains compact during cooking and is perfect for this type of dish.  
From the most ancient ancestral grains, Monococco and Perciasacchi, we produce various pasta shapes, among which the "busiate" stands out.  Their name derives from their twisted shape: in the past, the strips of pasta were rolled on a "buso" branch, the trunk of the Saracchio still used today by craftsmen to wicker chairs and to produce ropes.  
Between the provinces of Trapani and Palermo, Catarratto, one of the oldest grape varieties on the island, finds excellent expressiveness.  The sandy, loose, red soils and the pedo-climatic conditions allow the grapes perfect vegetation and maturation.  From this vine we produce Cèlu, a PGI white wine, which is remembered for its freshness, its floral and citrus notes and its exceptional livability.
