In the 1970s, the Castelmaure cellar took a strong and assumed turn: moving upmarket and in excellence. The policy of the cellar remains the same 50 years later, to create superb expressions of the terroir with a lot of drinkability and for all budgets. It is the result of meticulous work from the vine to the bottling. Thanks to a demanding plot selection, which allows us to vinify the right grapes in the right cuvée, and to ever more innovative vinification methods,
Castelmaure has thus created five ranges

very distinct that challenge received ideas...

Since 1921, the winery has stood proudly in the heart of the village.

It is here that we vinify, at the foot of the vines, in noble, century-old concrete containers, whose thermal inertia improves our macerations.

At the end of the 1970s, Marc Dubernet, a renowned oenologist, with whom we work, encouraged the cellar to set up carbonic maceration on the Carignans (in whole bunches). The results are not long in coming, very fruity, round, supple wines without harshness.

This method has remained the same today to the point of being our signature, assumed. We harvest 100% of the vineyard by hand and transport the grapes in containers, for optimal respect of the fruit. We thus keep our very old plots, difficult to work, on hillsides, which the machine would have made disappear to the detriment of new plantations.

Values that have been ours for 100 years… at least

We took root in this richness a few years ago, by setting up a conservatory of grape varieties. Composed of 130 different clones, including 30 from Carignan, it reflects the diversity of our vineyard, its memory and an unrivaled tool for future generations.

In order to gain in quality, comfort and to develop aging in tuns and barrels, the cellar was enlarged in 2007. We then called on Anne Lacaton and Jean-Philippe Vassal, the very famous architects who renovated (among others ) the Palais de Tokyo in Paris. A minimalist building, ecological and integrated into the landscape.

Inside, the technicality accompanies us, precise thermoregulation system on all the vats, new generation willmess presses... everything to magnify our terroir.

The old building has been covered with solar panels since 2014 and the new cellar has a natural water cooling system. Since then, the cellar has continued to move forward in this direction, humble, modern and eco-responsible.

The territory of Embres and Castelmaure is very extensive and very varied in its soils and landscapes. It is a paradise for geologists.

To the south, a circle of white limestone cliffs marks the natural border with the Kingdom of Aragon and Spain of yesteryear, now Roussillon.
The North is delimited by dark schist hills, covered with a maquis of kermes and holm oaks, impenetrable, except for the wild boars and the genet, which cohabit with the alzine (Quercus ilex or holm oak) and the arjalats.
To the east, the small Visigothic chapel of Castelmaure dominates; at the exit of the gorges of the Perillos greenhouse, where runs a stream lined with cypresses, maples and strawberry trees, inhabited by dragonflies and stag beetles.
At sunset, behind the rampart of the Sauveille which protects the village from the winter wind, the small winding road of the Col de Laval leads us slowly towards an immense forest of pines, protective of the rousillous (delicious milk caps). The mists sometimes give this landscape an air of Japanese prints, where the soul can get lost.

In the middle, a large plain spreads out to the greenhouse and the Sauveille, marked by the dotted line of endless vines, where the ocher roofs and white walls of the village of Embres and Castelmaure shine.



It is in the heart of this landscape that the vineyards of Castelmaure take root. A vast vineyard of 450 ha developed on the different terroirs. In our cuvées, we blend the south-east expressions and its clay-limestone soils with those, north-west of the schist hills, an alloy of power and finesse.
