Aji Charapita Pepper - Torrid

The Aji charapita pepper is little known in Europe (unlike the Aji Amarillo), but it is all the rage with the greatest chefs across the Atlantic for its tropical flavor and its great rarity. Nicknamed "the mother of all peppers", it is a wild pepper that grows north of the Peruvian jungle. Little cultivated, it is one of the rarest and most expensive peppers in the world. However, the information circulating that it would be worth $ 25,000 per kg is a legend. It is certainly expensive because its wild picking and its very small size require a lot of work during the harvest; but like saffron, it is generally used in small quantities which makes it rather economical. Its fruity flavor goes easily with most dishes. However, although he is very small, he possesses an impressive strength that we have called "scorching". It should therefore be used sparingly and handled with care. When you have found the dosage that corresponds to your sensitivity, it can flavor your dishes from starter to dessert.
