Our Lonzo or dried salted roast is matured in our natural dryer at an altitude of more than 850 meters in the Haut Languedoc National Park. The meat comes from pigs raised on straw by three local breeders from Aveyron and Tarn with whom we have established strict quality specifications: Apalhat means "raised on straw" in Occitan. Our lonzo is tasty and very low in salt.
